Crafting Success One Slice at a Time

After 25 years in the pizza business and conducting over 700 interviews with pizza operators and owners, I’ve gained invaluable insights into what makes a pizza shop successful. Drawing from my own experience running a pizza shop that I didn’t truly love, as well as observing and learning from others across the country, I’ve envisioned the exact pizza shop I would open today. Here’s how I would do it to ensure both profitability and personal fulfillment.

Start With Great Pizza

The foundation of any successful pizzeria is its pizza. Without a high-quality product, everything else becomes exponentially harder. For me, the ideal choice is New York-style pizza. It’s versatile, popular, and works well in a takeout model. While other styles like Neapolitan or Detroit might be tempting, they come with limitations—either they’re not as suitable for frequent consumption or don’t align well with the operational model I envision. A thin-crust New York-style pizza is easy to make, satisfying to customers, and perfect for a streamlined takeout experience.

Keep the Menu Simple

A small, focused menu is key to success, especially when starting out. I’d begin with just 5 to 10 pizzas, ensuring each one is crafted to perfection. Adding new items later as specials or exclusive offers allows for flexibility without overwhelming operations. Removing items from a menu once customers grow attached is far harder than adding them later.

Takeout-Only Model

To minimize overhead, I’d start with a takeout-only model. A small footprint of 500 to 1,000 square feet would suffice, keeping costs manageable and making it easier to turn a profit. Expanding later is always an option, but starting with a large space and struggling to fill it can lead to financial strain. Focus on sustainability and profitability from the outset.

Online Ordering First

In today’s digital age, online ordering is essential. I’d invest in the best online ordering platform available, ensuring a seamless experience for customers. In fact, I’d forgo having a phone line entirely to encourage customers to use the online system. This not only reduces stress for the team but also streamlines operations. Customers can take their time browsing the menu, and the ordering process becomes more efficient for everyone involved.

Minimal Staff

Initially, I’d aim to operate with as few employees as possible. A smaller team is easier to manage and keeps labor costs low. The goal is to focus on profitability while maintaining a great experience for both the team and customers. Over time, as the business grows, the team can expand strategically.

No Delivery to Start

Delivery adds a layer of complexity that’s unnecessary at the beginning. Managing delivery drivers or coordinating with third-party platforms can be overwhelming. Instead, I’d concentrate on takeout and use social media platforms like Instagram, TikTok, and YouTube to build awareness and drive traffic. Delivery could be added later if demand warrants it, but starting with a simpler model allows for a smoother launch.

Leverage Social Media

Social media is a powerful tool for promoting a pizzeria. Platforms like YouTube are especially underrated for showcasing the process and building a community around the brand. By sharing behind-the-scenes content and engaging with customers, I’d create a loyal following and attract new customers.

Focus on Customer Experience

The fewer distractions, the better the customer experience. With a small menu and online ordering, the team can focus on making great pizzas and providing excellent in-person interactions. Customers appreciate efficiency and quality, and this model ensures both.

Opening a pizza shop isn’t just about loving pizza—it’s about creating a sustainable business model. By starting small, focusing on quality, and leveraging technology, you can build a profitable and enjoyable pizza business.
